Abstract

Tiger nut tubers (Cyperus esculentus L) milk and egusi melon (Colocynthis citrullus) seeds milk were selected for production of candies. The candies developed from tiger nuts and egusi melon seeds milk and their blends were subjected to sensory and physicochemical analysis.
